I'm pretty sure that Musk's "you can tell it's real because it looks so fake" line was a joke meant to screw with conspiracy theorists and flat earthers, not an attempt to reverse-psychology brainwash the "sheeple". It's not the sort of thing which would change any opinion.

The reason why you can't see any stars in the image... you can't see stars in the daytime because of the sun's light. You can't see as many stars as usual during a full moon because of the moonlight. And you can't see any stars when there's a gigantic "full earth" in your "sky" because of the earthlight on one side of you and the sunlight on the other. It's a glare issue.

There is also some sort of camera setup in the front of the car, so that would account for at least one of the reflections.

You can't see stars in any photograph, because their light is so faint it only registers with time exposures. You can test this yourself by going outside on any dark night, pointing your cell phone at the sky and taking a picture. How many stars do you see? Does that mean they don't exist?
