Seroconvert - acquire antibodies as a result of the body's immune system attempting to fight off an infection. Possibly in context of vaccinations too.

In context, I think the guy means that all gay people eventually get aids, like the infection is something the body spontaneously produces, similar to how dirt 'spontaneously produced mice and bugs' until evil scientists performed tests and discovered that it didn't.
