Well voodoo priests seem to believe that they are people who have died and either were not buried properly (proper ritual in other words) or not "prayed over (meant to read as chanted over) properly so therefore they come back to life and persecute the living. For all we know they can be dead bodies inhabited by demons which would explain why these priests believe they are the dead come back to life. I said it before, and I'll say it again: These people live in a comic-book universe. They have absolutely no grasp on the distinction between reality and fantasy.
That's...not how they believe zombism works. They have to choose to zombify someone and give them what's actually a potent poison. Unlike demonic possession zombism does work, just not in the way they believe. The poison paralyzes the victim and makes their vital signs nearly undetectable, so they're pronounced dead and are buried. If the victim is lucky the priest will unbury them before they asphyxiate, but their brains will be damaged enough to essentially strip them of self-awareness. Thus they're much more susceptible to suggestion.

I think you're thinking of zombies. It's usually the voodoo priest who turns people into zombies. And it's all a bunch of hokum. The legend is that a voodoo priest will give someone some kind of drug without them knowing it which renders their body to appear without vital signs. The person is then buried, and the voodoo priest will dig them up and make them their slave, all the time giving them more drugs to remove their free will.
Whether or not it's ever happened is up for debate.

It's actually kind of beautiful to see a 'creole religion' with elements of Catholicism in order to hide it pop up underneath that oppression, even as an atheist.

The 'zombies' are NOT dead. They are poisoned so they seem dead by fish toxins and then given datura by their masters so they can use them as mind control slaves.
There was even one who luckily didn't suffer too much brain damage when he was buried who came out of the "zombie" state when his master died and was able to tell about it sometime in the 1980s.
There is also some evidence that zombification is also used as a form of punishment by Haitian secret societies going back to the Haitian War of Independence.
