There’s no ‘knowing’ involved at all. You’re wrong again.
Probably started as a patch of color that drew a certain species of wasps. The orchids without that patch died off for lack of pollination. Then the flowers mutated and the ones closest to what the wasp was looking for got pollinated. The ones furthest did not.
And with each generation the picture got a teeny bit better and better. Especially since someone above pointed out that only about 10% of the flowers got pollinated. That’s a sharp selection curve.

It doesn’t. It doesn’t even know that wasps exist. Just something it does makes pollination more likely, so it reinforces that.
