But if evolution is true, suppose it's just that the chemicals that evolved into MY brain, did not evolve the same as the chemicals that evolved into YOUR brain, and we just understand the world differently. Who are YOU to say I'm wrong about ANYTHING?
Simple: we can validate it with other people and are able to apply what we know to do useful work. If NASA thought 2+2 was 5 they'd never be able to make a functional space shuttle.

And music is just a bunch of sound waves, but that doesn't mean it has no meaning. How does knowing how something is constructed take away its meaning?

Yeah, and natural selection prefers those that more accurately perceive reality. For example, an animal that can identify a predator is more successful than one that can't. Granted, our senses aren't perfect but they are reliable enough and when they're not, there's always reason and testing.
