What did the fish do lay a egg and out popped a full bird. Or wait, maybe the fish jumped on land and somehow grew lungs, then thought to itself, wow if only I could fly (I think therefore I am) presto wings started growing...

I see these people have yet to take the initiative to investigate after reading/hearing over and over and over 'but that's not how evolution works.'

methinks some of these people have actually decided to explore evolution but made the mistake of talking with their pastor first. *cue funereal bong sound* I can hear it now: "If you dare to seek this type of heretic knowledge then you deny the existence of God, deny the Holy Bible and deny Jesus Christ. Your soul will be doomed and I will be unable to help you." An excellent way to keep your flock under the thumb and collection plate full! Some of us said BS.

No you'd see an ape-like creature whose great-great-great-another hundred or so great-grandchildren stand up straighter, have a bit less hair, and are practicing their new-found ability to make different noises. And the 236-great-grandchildren of them have invented a wooden spear for hunting, but still would have you baffled about whether they're apes or men. Their great-great-grandchildren however will have a fluted point on the spear made from a skillfully flaked piece of chert. The 784-times-great grandchildren of them are reading this on the iPad, microwaving dinner, and speak four languages, including Klingon. Don't worry.
