Actually, we have no idea of what's inside the ball earth model either.
All theories of "molten cores" and such are just that...theories. No proof.
The deepest they've been able to dig has been 5-8 miles. By the time they reach that depth, all drilling equipment fails due to high heat.

They do have a "theory" (used in the colloquial sense of "hunch" or "guess"), just not a scientific theory (the thing with falsifiability, evidence to support it, predictions, explanatory power, etc.)
The scientific theory avenue is waaaaaaayyy too much work.

Geologists also have technology to look inside the earth without making holes.
