If you believe an apple once evolved into a zebra, and a few days later in another place another apple evolved into another zebra, instead of say an owl - now it's beyond this fundie's acceptance limits. They just don't get it, but what DO they get?

Although, this person seems to be simply ignorant. There might yet be hope for him. He isn't actively denying all the evidence like some other creationists.
With ONE mutation you're usually still backwards compatible with the specie of your parents. If not, then the mutation will die with you. Duh.
After a buttload of mutations, your far descendants may not be compatible with your specie, but they will be compatible with their contemporaries. If your specie used to live in different places subject to different selective pressures, the groups may well have evolved into different things. This is pretty much the definition of speciation, and yes, we DO have living examples, though they are mostly mutant fruitflies.
I'm pretty sure @szena nailed it, it's a big creationist strawman that some mutant monkey could have appeared taller and less hairy but the odds of it happening twice to produce a mate for it are beyond ridiculous.
It's a real pain to get through to these people as they just gleefully misrepresent sciences ideas deep into the absurd while we're helpless to find ways to ridicule their already full batshit religion beyond what it already is.
You'll actually hear and see comments brought hear from devote Christians saying "Sure, it sounds crazy and ridiculous but it happened." Special pleading at it's most arrogant.

You’re expecting ‘evolve’ to mean a huge change, sufficient to prevent an individual from being able to reproduce with either of its parents. That’s not evolution.
YOU probably have 30 to 50 mutations in your DNA, depending on which expert you talk to. You’re still human and you’re still fertile to breed with at least most of the other humans.
Maybe one of your mutations is not to have wisdom teeth. You’re still fertile with humanity. Just .0001% different from them.
You and your offspring save money on dentistry. This gene slowly spreads through the population until people have to look ‘wisdom tooth’ up on wiki.
