1) The idea that homosexuality was delisted because of "political correctness" is a right-wing myth (albeit one that Roger Schafly on Wiki keeps editing into the DSM listing). It was delisted because the definition of a mental illness was formalised and it didn't remotely fit the terms.
2) If you consider gay sex to be the "opposite of sex", you're doing it wrong.

I love it when the right wing assholes try to say that the only reason same sex attraction isn't considered a mental disorder today is because of "political correctness" and protests from the liberal pro-gay crowd. Because, gosh, there's just no way that homosexuality could have been classified as a mental illness due to ignorance and prejudice.

Originally mental illness was just anything those in the psychiatric profession felt was "wrong".
They formalized the definition to make it less subjective and now homosexuality doesn't fit because other than from the effects of prejudice or discrimination it doesn't impair one's functioning in everyday life or cause distress.
There's still gray area in defining mental illnesses as there is gray area even in defining a person's emotions. There will always be some gray area because of the sheer complexity of the mind and of how humans judge themselves and other humans in general. But at least now it's firmly recognized that "I think that's gross" is not enough reason to classify something as a mental illness.
Even if it was a mental disorder, who the hell cares? What's so automatically wrong about it? There's plenty of actual mental disorders (i.e. Asperger's syndrome) which aren't harmful to anyone. Having a mental disorder shouldn't be stigmatised. At all.
Coprophagia isn't a mental disorder (at least not most instances of coprophagia), it's a fucked up fetish. A fetish that can be dangerous because shit has, well, shit in it that can make you sick. Unlike homosexuality, which if you practice safe sex is, surprise, as dangerous as heterosex is.
